Tasty Tuesday with a dash of Randomness

I know it’s been a while since I posted a recipe. I made a great soup last night, sorry, no pic, but please check out the recipe below:

Thai Chicken Vegetable Soup

What You’ll Need

1 tablespoon vegetable oil
1 medium carrot, peeled and cut into 2-inch matchstick-thin strips (about 1/2 cup)
1 medium red pepper, cut into 2-inch matchstick-thin strips (about 1 1/2 cups)
1 cup sliced mushrooms (shiitake, oyster, cremini)
1 carton (32 ounces) Swanson® Thai Ginger Flavor Infused Broth
2 cups shredded cooked chicken
1 can (about 14 ounces) unsweetened coconut milk
2 tablespoons lime juice
2 tablespoons chopped fresh cilantro leaves

How to Make It

1 Heat the oil in a 4-quart saucepan over medium-high heat. Add the carrot and pepper and cook for 5 minutes or until tender-crisp, stirring occasionally. Stir in the mushrooms, if desired.
2 Add the broth to the saucepan and heat to a boil. Reduce the heat to medium-low. Stir in the chicken and cook for 5 minutes or until the chicken is hot, stirring occasionally.
3 Stir in the coconut milk and cook until the mixture is hot and bubbling. Stir in the lime juice and cilantro just before serving.

I have a favorite Thai restaurant I visit here, Surin West, and they make the best Coconut Soup. This soup really reminded me of that soup. I plan on making again with Shrimp next time instead of Chicken.

Now for the Randomness:

My girlfriends and I are planning on going to Essence. Well, I’m the only one that lives in Birmingham, everyone else is traveling from Atlanta. Anyhoo, my plan was to just meet them in NOLA, because it’s going backwards for me to drive to ATL only to travel with them. I do that when we are taking our island excursions. I’m saying all of this to say, damn you Prince! How dare you kick off Essence on Friday at 6:30 PM no less, when my train isn’t scheduled to arrive until 7:38 PM. I was on a mad hunt last week to change my travel arrangements, so I will now be flying to NOLA, which is what I’ve always done, but airfare was so expensive, so I jumped at the chance to ride Amtrak for $88 roundtrip. I will just ride the train back, since I refuse to pay $350 to fly back. Crisis averted!

My hair, I’m still trying to decide what to do for vacation and I’m really leaning towards a Wash N Go, which I finally feel I have a handle on! Here’s a snap of my latest go:

    I’m jealous you get to go see Prince!
    I really want to like Thai food, I just can’t. Except for lettuce wraps. Those are the bomb. But are they really Thai?
    Do wash and go for your hair. It’s always easier on vacation!

    I’m jealous of your wash and go. I have to wait for my hair to grow longer to look like that. When my hair is straight it is in the middle of my back. My wash and go looks like I have a bob! Don’t you love shrinkage!?
