Thankful Thursday – The one where I go cook for my Sick & Shut-in Sister!

My Sister had been complaining about not feeling well leading up to the New Year holiday. She actually tried to self-diagnose herself and I went alone with it and actually brought her some Antibiotics that I stopped taking at the advice of my Doctor (they did not agree with me). We met at my Mom’s since it was New Year’s Day. I brought the meds and she asked for some of my Mac n Cheese, but turned up her nose when I shared with her that it was Lobster Mac n Cheese. Her husband took it instead and loved it. Score for me!

Long of the short, after they left to head home, she had her husband to take her to the ER! On New Year’s day, no less. She was released thank goodness, but advised to follow up with her Doctor, but she really was sick and shut in, so on Saturday I went grocery shopping in my house and took a drive out to hers, we live about 30 minutes away from each other, made a stop by her local grocery store and once I made it her house, settled in to make a pot of White Chicken Chili, see recipe below. And I also made this Easy Shrimp Dish too since she had Shrimp on hand.

White Chicken Chili

1 lb boneless – skinless chicken breast

1 medium onion – chopped

1 ½ tsp. garlic powder

1 tbl. Veg. oil

2 cans (15 ½ oz) Northern Beans, rinsed and drained

1 can (14 ½ oz) chicken broth

2 cans (4 oz.) chopped green chilies (I use 1 can of Rotel)

1 tsp. salt

1 tsp. cumin

1 tsp. oregano

½ tsp. pepper

¼ tsp. cayenne (I don’t use this)

Saute chicken, stir together all of the ingredients, bring to a boil, just before servicing, stir in:

1 c. sour cream

½ c. whipping cream (I don’t use)

I add cheese before the sour cream (the recipe doesn’t call for this)

I’m so thankful for family and that I was able to help my sister while she was on the mend. What are you thankful for today?
